Cat shares her number one weekend dish to make with the basics you may already have in - Vegan Apple & Crunch. Minimum effort or skill needed, this is the ideal way to spend a Sunday afternoon. Grab a spoon!
What you need?
Stewed Apples
- 300g cooking apples
- 50g soft brown sugar
- 1-2 tsp cinnamon
- 100g sultanas
- Splash of water!
Vegan Crunch
- 25g vegan butter
- 50g soft brown sugar
- 120g porridge oats
How to make it?
Stewed Apples
- Peel, core and and slice apples.
- Put in pan with other ingredients including the splash of water.
- 3. Bring to the boil and simmer until soft and breaking down, about 10 minutes. Stir during that time and keep an eye on it, adding more water as required if too dry.
Vegan Crunch
- Melt butter in pan and stir in the brown sugar and oats. Mix well.
- Spread on a baking tray and bake for 15 minutes in a moderate oven, stirring occasionally with a fork.
- Cool the mixture and set aside. When ready to eat spoon over the warm stewed apples, add a dollop of coconut yoghurt and get stuck in!
